I have done the very same thing to use mine on a Jon boat. I realize your situation may be different because of the V-bottom, but I cut two pieces of wood with the proper angle to fit my bow. I placed one piece of wood on the outside and the other on the inside, this gave me a flat mounting space for my Minnkota. The only disadvantage to turning the motor around is that you will not be able to tilt it forward as you did when it was on the transom, because it will hit the bottom of the boat. If mounted to the side this shouldn't be a problem
